favourite national dish would be "Osh" it's not hard to cook but it depends on how you cook it ... I can't really describe but it's mostly rice carrot and meat on top... very delicious.

receipt for getting fat... get a job in an office and sit around all day.

ok ok ,something well known in germany (just as an example for those who don`t get food cooked by their mom all the time :)))

Sour roasted beef

Use for 4-6 servings:

1kg     piece of beef (e.g. from the upper back hip, no usual roast beef!)
1/4 l   vinegar from red whine or a mixture 50:50 red whine and vinegar
2 bay   leafs
2 tblsp whole black pepper
2 big   onions
1 big   carrot
200g    potatoes
1/4 l   bouillon
2 tblsp creme fraiche (or sour cream)
salt, pepper, oil

1. Place meat in a high dish, fill with vinegar (or mixture)
  until covered. Add bay leafs and pepper grains and place dish in the
  refrigerator. Leave there for 2-3 days, turn meat around at least once.

2. Get meat out of marinade and dry. Spice meat with pepper all around.
 
3. Cut onions, carrots and potatoes in little cubes.
  Heat oil, place meat in it and roast until brown from all sides.
  Add onions until brown, too.

4. Salt the meat, add potatoes and carrots, then the bouillon, and, optionally,
  some more red whine (esp. if you used only vinegar before).
  Add also a little of the marinade (without leafs and pepper).

5. Simmer for at least 1 1/2 hours on low heat in a closed pot, turn once.

6. Get meat out of the pot and keep warm.
  Puree the sauce, let reduce a little. Add creme fraiche or sour creme,
  add salt and pepper to your taste.

7. Cut meat into slices, serve.

Traditional side dishes are potatoes or Kloesse (dumplings),
and some vegetable like Rotkraut (that is hot red crabbage).

In some areas of germany, they add raisins and sliced apples to the sauce
so that it gets a more sweet-and-sour taste.

Meal "Osh" or some people know it as "Plov"

Main ingredients:

1) Sunflower oil - 300 ml
2) Rice - 1 kg (needs to be cleaned and washed properly)
3) carrot - 1.5 kg (needs to be cleaned slices in minimu slices looking like sticks)
4) meat (beef) - 1 kg (needs to be cut into 5-6 pieces)
5) 2-3 big onions (needs to be cut in pieces, ready to be fried)
6) Water (H2O)

optional ingredients:
1) chikpeas 300 - 400 gr (need to be kept in water for at least 10 hours before cooking)
2) Zira (special ingredient, I don't think it's available anywhere except for central asian countries)
3) garlic - exceptionally optional (I personally hate it) :vamp:

pour the oil into a deep frying pan, wait for it to heat, after the oil is ready start frying the onion untill it gets red then throw in the meat. Wait till the meat is almost done then throw in all the slices carrot and mix the whole thing, wait till the carrot starts to get all red and oily and starts to bend it should take about 30 minutes to have all this mixture ready... (optional: this is where you would add the wet chickpeas into the who mixture) - (I personally love it)
here comes the difficult part;
(optional: this is where you wold throw in uncleaned garlic into the mixture)
pour all the rice into the mixture dont mix just even the level of rice so that it;s parallel to the surface of the pen, pour in water it should take more than 1.5 liters of water, but u can use the amateurs method by calculating the water 2cm higher than the level of rice in the pan. (optional: this is where you would add zira)The rest is left up to steam cooking and rice obsorbing all the water. (optional: this is where you would throw in the "zira" particles into the pan) This is why you will need to close the frying pen leaving a small hole for steam to go out. It should take about 40 minutes for the water to be obsorbed and vapourized inside the pan.
note: the rice should be softened and ready to eat when u open the cap, if its not u need to add water and wait more.
if the rice is ready you need to mix the whole carrot, meat onion layer with rice layer and get on plates... the rest is up to your imagination... but the meat is better cut down into small pieces about 1-2cm square.  eaten all together.
u can use different salads - yogurt to go with the dish, I have always preferred tomatoes, cucumber chopped salads and yogurt.

HAVE A NICE MEAL

NOTE: if u didn't like the meal its probably because u cooked it wrong. I have personally fed it to many foreigners who have to visiting or on business trips... and this meal happens to be the favourite meal of over 90 % of the population in central asia.

Bobotie

Ingredients

2 tablespoons vegetable oil
2 onions, peeled and sliced
2 1/4 pounds good quality lean ground beef
1 thickish slice of white bread
1 cup milk
1 tablespoon medium curry powder (or hot for the hale and brave)
1 1/2 tablespoons sugar
2 teaspoons salt
freshly grated pepper (about a half teaspoon)
3/4 teaspoon turmeric
1 1/2 tablespoons malt vinegar
1/2 cup seedless raisins
2 tablespoons strong chutney
2 bay leaves (or fresh lemon leaves if available)
2 medium eggs

Preparation
Preheat oven to 350°F.

Heat oil in medium sauté pan. Stir in onions. Cook over medium heat until transparent. Add ground beef. Cook until lightly browned and crumbly.

Soak bread in half the milk, squeeze out excess milk and mash with a fork - DON'T TOSS SQUEEZED OUT MILK! Pour it straight back into remaining milk. Set milk aside.

Add curry, sugar, salt, pepper, turmeric, vinegar, raisins, chutney to the beef mixture. Spoon the mixture into a greased baking dish, and place bay leaves on top.

Bake for 50-60 minutes in preheated 350°F oven.

Beat egg with remaining milk and pour over mixture approximately 25 - 30 minutes before end of baking time.

Serve with steamed rice (traditionally yellow!) and extra chutney.

Pure South African comfort food! Especially nice in winter, or cold with a salad in summer.

Serves: 6
